Coorg Pandi Curry (Authentic Recipe)

Pandi Curry - Coorg Style




Pandi curry is one of the most loved dish in Coorg. The magical blend of spices leads to an unique pork dish which leaves an everlasting impression on your palate! Here's how the pandi curry is made in Coorg.

Ingredients:
Pork - 1 KG
Red chilly powder - 1 tsp
Turmeric powder - ½ tsp
Salt to taste
Lemon medium sized - 2
Onions medium sized - 4
Ginger - 10 gm
Garlic whole - 1
Green chillies - 7-8
Coriander leaves - ½ bunch
Coorg Shoppe Pork Masala Powder (a blend of roasted corriander seeds, cumin, cinnamon, etc) - 25 gm or 2 tbsp
Kachampuli (Coorg vinegar) - 2 tsp - as per taste

Procedure: 
1) Wash and drain medium cut pork. Add turmeric powder, salt, red chilly powder and marinate for about 30 minutes. 2) Grind coarsely sliced onions, ginger, garlic, green chillies, coriander leaves together. 3) Take marinated pork in a thick bottomed vessel, add ground paste, mix well and cook in medium heat till soft. Then add Coorg Shoppe Pork Masala Powder, kachampuli (local coorgi vinegar) and cook for 5 to 10 minutes.

Sprinkle little lemon juice and serve with hot rice, sannas or idlis. Tastes best with rice roti and kadambuttu.

Making Coorg Filter Coffee

Making Coorg filter coffee is very simple with this device called the percolator or in common terms - the coffee filter. First place the top portion of the filter (one with perforations) over the bottom portion (make sure it is not seated too tightly.. ;) else you will spill)..then put 2-4 spoons of Coorg Filter Coffee Powder..then place the umbrella like part over the powder..pour boiling water into the top portion a little short of the top end..place the lid..the decoction should have collected in about 15-20 min..all you have to do then is to heat the milk..add little decoction, sugar to taste and then mix..to be served hot.. :)
